Various types of milk:
- Untreated milk: it retains its entire natural flavour. It is advised to boil for 15 minutes before using. It remains good in the refrigerator for 24 hrs.
- Pasteurized milk: To kill bacteria by heating milk or other liquids to moderately high temperatures for a short period of time. Milk must be heated to at least 145°F for not less than 30 minutes or at least 161°F for 15 seconds, and then rapidly cooled to 40°F or lower.
- Sterilized milk: is homogenized milk, heated to about 112ºC under pressure for 15 mins in a sealed bottle. The bottle is rapidly pulled to 80ºC and then allows reaching a lower temperature.
- Skimmed milk: this is the milk almost without any fat. Basically, it is a fat buster, low-calorie produce.
- Fortified milk: extra nutrients are added to make the milk more nutritive. Usually, vitamin B is used.
- Flavored milk: flavour and colour added. Treated with a high temperature of 100ºC for about 15 mins, so that they may be kept later at room temperature.
- Condensed milk: is cow’s milk from which water has been removed. It is most often found in the form of sweetened condensed milk (SCM), with sugar added, and the two terms “condensed milk” and “sweetened condensed milk” are often used synonymously today. Sweetened condensed milk is a very thick, sweet product which when canned can last for years without refrigeration if not opened. Condensed milk is used in numerous dessert dishes in many countries.
