The Tom Collins is a Collins cocktail made from gin, lemon juice, sugar, and carbonated water. First memorialized in writing in 1876 by Jerry Thomas, “the father of American mixology”, this “gin and sparkling lemonade” drink is typically served in a Collins glass over ice. A “Collins mix” can be bought premixed in the supermarket and enjoyed alone (like a soft drink) or with gin.

Ingredients:
- 4.5 cL (3 parts) Old Tom Gin
- 3 cL (2 parts) freshly squeezed lemon juice
- 1.5 cL (1 part) sugar syrup
- 6 cL (4 parts) carbonated water to taste
Preparation: Mix the gin, lemon juice and sugar syrup in a tall glass with ice, top up with soda water, garnish and serve.
Served: On the rocks; poured over ice
